In honor of fall and this great weather we are having, I thought this was a great recipe to share. Please note, this recipe will make 5 dozen mini muffins.Bon Appetit`
INGREDIENTS
- 1 1/2 cups sugar
- 1/2 cup oil
- 1 (16 oz) can pumpkin
- 2 eggs
- 2 cups flous
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
DIRECTIONS
- Preheat oven to 375 degrees
- Mix eggs, sugar, oil, and pumpkin
- Mix flour, baking soda, cinnamon and nutmeg
- Stir into pumpkin mixture
- Pout into mini-muffin pan
- Bake 10 to 12 minutes
